# How To Make It:

01 - Steep saffron threads in hot water and set aside.
02 - Season chicken thighs evenly with salt and freshly ground black pepper.
03 - Heat olive oil in a heavy-bottomed pot over medium-high heat. Brown chicken thighs for 2 to 3 minutes per side until lightly golden. Remove and reserve.
04 - In the same pot, cook chopped onion for 4 to 5 minutes until softened. Add garlic, cumin, coriander, and turmeric; cook for 1 minute until fragrant.
05 - Add rinsed basmati rice to the pot, stirring to coat grains with the aromatic mixture and oil.
06 - Pour in chicken broth and saffron infusion including threads. Nestle seared chicken thighs into the rice.
07 - Bring to a gentle boil, then reduce heat to low. Cover tightly and simmer for 20 minutes until rice absorbs liquid and becomes tender.
08 - Remove pot from heat and let stand covered for 5 minutes. Fluff rice gently with a fork.
09 - Top with toasted almonds, golden raisins, fresh herbs, and lemon wedges as desired. Serve warm.
